I need a frosting recipe for a light, fluffy frosting with coconut. I looked at all kinds of them online, but I want to make one that I know is exactly what I am looking for. I have to make a cake for SIL's b-day (yes I know I am just a glutton for punishment) but SIL that lives downstate will be coming up on Sat and her b-day is the week after. I will not be making one of my interesting cakes, I would like to make a 4 layer white cake with coconut frosting...but need the right frosting recipe...anyone have one they have used that would fit the bill? What I am looking for is something that tastes like the frosting that is on the Pepperidge Farm cake...
