I'll Share My Secret Recipe for Pineapple Souffle
OK, don't be scared. "Souffle" is very loosely used here. This is so easy your children could make it. It's beloved by all and is an excellent accompaniment to ham, especially. It's a must for Easter dinner. Very rich!
Pineapple Souffle
1/2 Cup Butter
1 Cup Sugar
4 Eggs
16 oz. Can Crushed Pineapple, drained
5 slices White Bread, cubed
Cream the butter and sugar. Beat in the eggs one at a time. Stir in pineapple. Fold in the bread. Pour into a greased casserole dish.
Bake 1 hour, uncovered, at 350 degrees.
I have never made this that I haven't at least doubled this recipe.

We always serve it as a side. It is very sweet, though, but maybe that's why it's so good with ham and pork - the salty/sweet combo.

Reminds me of an apricot recipe which layers ritz crackers, apricots and butter.
